CELEBRATING THE AMERICAN WORKER
Labor Day symbolizes the end of summer and the beginning of fall. It is also time to celebrate the American worker. Now, more than ever, we see how important every American worker is to our great country. America was build by ingenuity, perseverance, imagination, and hard work. The American worker is the back bone of our country, and the inspiration for many great songs ! BRINGIN' HOME THE BACON POTATO SALAD is the perfect side dish for your holiday cookout or gathering. Actually, I was going to post the recipe a few weeks ago, but, Gene dug into the bowl of Potato salad before I could get a picture. LOL Anyway, I hope you enjoy this dish and thanks to everyone for your hard work. God bless the American Worker.
BRINGIN' HOME THE BACON POTATO SALAD
six to eight medium potatoes
three hard boiled eggs
1/2 of a onion
four slices of bacon
half a cup of sour cream
half a cup of mayo
two heaping tablespoons of sweat pickle relish
salt and pepper
Peal and cube the potatoes and boil until tender, drain and let cool.
Cook the bacon until crisp then crumble and hard boil your eggs then dice (reserve one slice of bacon and half of one egg for garnish). Combine potatoes, eggs and bacon along with diced onions. Make a dressing by combining sour cream, mayo and relish. Pour over the potato mixture and stir in gently. Add salt and pepper to taste, place in a serving bowl and garnish with reserved bacon and egg. * I usually use my moms homemade relish but today I used Papa Franks Moonshine Relish and it is delicious also. Use a good relish if it is not good out of the spoon do not put it in your Potato salad. Enjoy it ! An I'm not going to let go of summer just yet !
